Spicy Chicken Masala

Spicy Chicken Masala

Ingredients:

Chicken - ½ kg
Onion – 2 (chopped)
Tomato – 3 (chopped)
Green chili – 2 (chopped)
Garlic – 2 cloves (chopped)
Ginger – garlic paste – 1tsp
Turmeric – 1/2 tsp
Red chilli powder – 1 tsp
Coriander powder – 2 tsp
Garam masala - 1/2 tsp
Oil – 2 tbs
Curry leaves – 5-7
Salt to taste
Cilantro to garnish

Indian Spicy Chicken Masala

Method:

  • Wash the chicken and cut in to pieces. Boil the chicken until its half done.
  • Heat oil in a pan. 
  • Add chopped onion, garlic, curry leaves and chilli and fry until the onion becomes transparent.
  • Add turmeric and ginger garlic paste and fry till the raw smell comes out.
  • Add the chopped tomatoes and saute it till it becomes mushy.
  • Add chilli powder, coriander powder, garam masala, salt and saute it for a minute.
  • Add the boiled chicken and one cup of water and cook until the chicken is done and oil separates from the gravy.
  • Garnish with cilantro.
  • Serve hot with rice, chapattis etc.

Egg Fry

Ingredients:

Egg - 4
Red chilli powder – 1 tsp
Coriander powder – 1 1/2 tsp
Curry leaves – 6 - 7 (Optional)
Cilantro – few leaves
Oil – 2 tbs
Salt to taste

Spicy Easy Egg Fry

Method:

Boil the eggs and cut into two halves.
Heat oil in a pan. Add curry leaves and cilantro and sauté it for a minute.
Add chilli powder, coriander powder, salt and mix it well.
Add boiled eggs and saute and fry it for 5 minutes in a low flame.
Serve hot.

Plantain Fry / Valakaai Varuval

Ingredients:

Plantains (Green banana)
Turmeric - ¼ tsp
Chilli powder – as needed
Salt to taste
Oil – 2 tbs
Curry leaves - 4-5 (Optional)


Method:

  • Peel the skin and cut it into fine round pieces.
  • Boil the plantain. Once it is half-done drain it and run under the cold water.
  • Mix plantain, turmeric, chilli and salt in a bowl.
  • Keep it aside for about 20- 30 minutes.
  • Heat a pan and add 2 tbs of oil.
  • Place the plantain and fry it for 5 minutes, flip and cook for another 5 minutes or until they turns crisp.
  • Fry some curry leaves and add to it.

Lemon Rice / Elumichai Sadham

Lemon Rice with Potato Fry

Ingredients:

Rice - 2 cups boiled rice
Lemon juice - 1/4 cup
Oil - 2 tsp
Red chili – 3
Green chili –-2
Curry leaf - 7 to 10
Cumin seeds - 1tsp
Mustard seeds - 1 tsp
Chana dal - 1 tsp
Urad dal - 1 tsp
Turmeric powder - 1/2 tsp
Roasted peanut - 1/2 cup (optional)
Asafoetida - pinch
Cilantro to garnish
Salt to taste

Recipe to make lemon rice

Method:

  • Heat oil in a pan. Add mustard seeds wait until the seeds crack.
  • Add chana dal, urad dal, cumin, red chili, green chili and curry leaf and stir fry for a minute.
  • Add asafoetida and turmeric and mix it well.
  • Add lemon juice, salt and cook for about a minute.
  • Now add the precooked rice, peanut and mix it gently.
  • Garnish with cilantro.

Spicy Potato Fry / Urulai Kilangu Varuval (Indian Recipe)
Spicy Potato Fry

Ingredients:

Potato (medium size) – 2 (boiled and cubed)
Onion – 1 (chopped)
Garlic – 1 clove (chopped)
Green chilli - 1 
Curry leaves – 10
Chilli powder – 1 1/2 tsp
Turmeric powder – ¼ tsp
Coriander powder – 3/4 tsp
Mustard seeds– 1 tsp
Urad dal – 1 tsp
Cumin seeds - 1tsp
Oil - 1 tbs
Salt to taste
Cilantro to garnish
Spicy Potato Fry / Urulai Kilangu Varuval (Indian Recipe)

Method:

  • Heat oil in a pan, Add mustard seeds, urad dal, cumin seeds and curry leaves. Let it sputter.
  • Add chopped onion, garlic and chilli and fry till onion turns transparent.
  • Add turmeric, chilli powder, coriander powder and salt and mix it well.
  • Sprinkle some water and stir it for a minute.
  • Add cubed potatoes and saute it without breaking the potatoes.
  • Cook on low flame till the potatoes turn golden brown and nicely coated with masala.
  • Garnish with cilantro.
  • Enjoy with coconut rice, lemon rice, sambar rice, chapattis etc.
